ASPARAGUS TOMATO 

CHEDDAR QUICHE

I N G R E D I E N T S

  • ½ cup McCall’s 6 or 12 Month Aged Irish Cheddar, shredded

  • ¼ cup shredded parmesan cheese

  • 10 oz asparagus, trimmed and cut

  • 12 grape or cherry tomatoes, halved

  • 6 eggs

  • 2 tsp Dijon mustard

  • ½ tsp chopped fresh dill

  • ¼ tsp pepper

I N S T RU C T I O N S

  1. Preheat oven to 350°F and lightly spray a 9-inch glass pie dish.

  2. In a medium bowl, whisk together eggs, Dijon mustard, dill, and pepper. Set aside.

  3. Arrange asparagus and cherry tomatoes in the pie dish, then top with half the McCall’s Aged Irish Cheddar. Pour the egg mixture over the vegetables.

  4. Bake for 20 minutes, or until a knife inserted in the center comes out clean. Sprinkle with remaining cheddar and let cool for 10 minutes before slicing.
