SEARED PORK WITH

MUSHROOM CREAM SAUCE

I N G R E D I E N T S

  • ¼ cup grated McCall’s Whiskey Irish Cheddar

  • ¼ cup grated parmesan cheese

  • 2 lbs pork loin

  • 8 oz white mushrooms, whole or sliced

  • 2 cloves garlic, minced

  • ½ cup heavy cream

  • 2 oz cream cheese, softened

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 tsp dried Italian seasoning

  • 1/2 teaspoon salt

  • Optional: add potato boxty in between pork slices, and blistered cherry tomatoes and fresh parsley for garnish

I N S T RU C T I O N S

  1. Season pork loin with salt and pepper. Sear both sides until the internal temperature reaches 155°F. Let cool, then slice.

  2. In a skillet over medium-high heat, melt butter and olive oil. Add mushrooms and garlic, sautéing until tender.

  3. Stir in McCall’s Whiskey Irish Cheddar, parmesan, cream cheese, Italian seasoning, salt, and pepper. Cook, stirring frequently, until the sauce is smooth and bubbly.

  4. Serve sliced pork loin with the mushroom-cheese sauce, garnished with fresh parsley.
