CORN FRITTERS

I N G R E D I E N T S

  • 7 oz McCall’s 6 Month Aged Irish Cheddar

  • 1 cup flour

  • 2 cups corn kernels

  • ½ cup shredded flavored

  • ⅓ cup fresh chives, chopped

  • ½ cup milk

  • 2 eggs

  • 1 tsp salt

  • 1 tsp chili powder

  • ½ cup oil, for frying

  • Optional: 1-2 jalapeños, diced

I N S T RU C T I O N S

  1. In a large bowl, whisk together flour, salt, and chili powder. Add corn kernels, shredded McCall’s 6-Month Aged Irish Cheddar, diced jalapeño (optional), and chives. Toss to coat.

  2. In a separate bowl, whisk eggs and milk until smooth. Pour into the dry ingredients and fold gently to form a thick batter.

  3. Heat 1/2 cup oil in a skillet over medium heat. Drop 2 tablespoons of batter per fritter into the hot oil, flattening slightly with the back of a spoon.

  4. Cook for 2-3 minutes per side until golden brown. Transfer cooked fritters to a paper towel-lined plate. Keep warm in a 200°F oven if frying in batches.

  5. Serve warm and enjoy!
